1 package of Beyond or Impossible beef
1 Tbsp of onion, chopped finely
2 cloves of fresh garlic, minced
1 Tbsp of nutritional yeast
1 Tbsp of olive oil
2 Tbsp of dairy-free bread crumbs
1 tsp of mixed italian herbs
3 Tbsp of fresh parsley OR 1 tsp of dried parsley
½ package of fresh basil, chopped finely OR 1 tsp of dried basil
1/4 tsp of salt and pepper, to taste
1. Mix all your ingredients together in a large bowl. Taste and adjust seasoning if needed.
2. Roll into balls, about 1 inch in diameter. Don't make them too big or they won't cook properly.
3. Heat oil in a cast iron pan over medium heat.. Add in meatballs and cook for 10 minutes with a cover. Keep a close eye on them, turning every few minutes.
4. Add to your favourite pasta and marinara sauce for a vegan twist on spaghetti with meatballs, or get more creative and serve with potatoes, veggies and a gravy for a holiday dinner.
