
Ingredients
2 tbsp ground flax meal
6 tbsp water
1 cup of flour
1/3 cup cocoa powder
1/2 cup vegan margarine
2/3 cup vegan chocolate chips
3/4 cup sugar
1 tsp vanilla extract
Preparation
Make your "flax egg" by mixing together flax meal and water and set aside for 5 minutes to thicken.
In a large bowl, add flour and cocoa powder and stir to combine well.
Put your margarine in a large, microwave-safe bowl and warm for 30 seconds until melted. Then add 1/3 cup of chocolate chips, sugar and vanilla.
Add this to the flour and cocoa mixture. Also add in the flax mixture, another 1/3 cup of vegan chocolate chips. Mix until combined.
Grease your pans and add batter to each mini muffin tin. These will expand a little, so don't fill the cups up fully. Option to just spread the dough onto a 9" x 9" baking sheet.
Bake your brownies at 350F for 13 minutes. Don't worry if they seem soft coming out of the oven they will firm up as they cool.
