Tangy Purple Coleslaw

  • 1/2 head of purple cabbage, finely shredded

  • 1 carrot, peeled and grated

  • 2 green onions, finely sliced

  • 1/3 cup of apple cider vinegar

  • 2 Tbsp of white vinegar (optional - leave out if you don't want this to be too acidic)

  • 3 Tbsp of olive oil

  • 1 tsp of celery seed

  • 1 Tbsp of white sugar or other sweetener of your choice

  • Salt and pepper to taste


  1. Add the shredded green cabbage, carrot and onion to a large bowl.

  2. In a smaller bowl, whisk together the apple cider vinegar, white vinegar, olive oil, celery seed, sugar, salt and pepper to create the dressing. Taste and adjust flavours as needed.

  3. Add about half of the dressing to the cabbage, onions and carrots and gently toss. Slowly add more dressing until you’ve reached your desired consistency.
