Sugar Cookies with Pink Frosting

  • 2 Flax eggs = 2 Tbsp of flax meal + 6 Tbsp of water

  • 3/4 cups vegan butter or margarine, softened

  • 1 1/2 cups white sugar

  • 1 tsp vanilla extract

  • 1 tsp almond extract

  • 3 cups of flour

  • 2 tsp baking powder

  • 1 tsp baking soda

  • 1/2 tsp salt


  • 3 Tbsp of vegan-friendly margarine

  • 2 cups of icing sugar

  • 2 Tbsp of plant-milk

  • 1/4 tsp of vanilla

  • Optional food colouring (2-4 drops of red to get pink icing)


  1. Preheat oven to 350 F.

  2. Make your flax egg by combining flax meal and water in a small bowl. Set aside for a few minutes to thicken.

  3. Add all the rest of your cookie ingredients to a large bowl and stir. Then add flax egg and mix again.

  4. Roll your cookies into 1" balls on a parchment-lined baking sheet.

  5. Bake for no more than 7 minutes - they will be done! Remove from the oven and let them cool before frosting.

  6. Make your frosting by combining all your ingredients in a mixing bowl and using either an electric mixer or a whisk to beat until creamy and smooth.
