2 Flax eggs = 2 Tbsp of flax meal + 6 Tbsp of water
3/4 cups vegan butter or margarine, softened
1 1/2 cups white sugar
1 tsp vanilla extract
1 tsp almond extract
3 cups of flour
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
3 Tbsp of vegan-friendly margarine
2 cups of icing sugar
2 Tbsp of plant-milk
1/4 tsp of vanilla
Optional food colouring (2-4 drops of red to get pink icing)
Preheat oven to 350 F.
Make your flax egg by combining flax meal and water in a small bowl. Set aside for a few minutes to thicken.
Add all the rest of your cookie ingredients to a large bowl and stir. Then add flax egg and mix again.
Roll your cookies into 1" balls on a parchment-lined baking sheet.
Bake for no more than 7 minutes - they will be done! Remove from the oven and let them cool before frosting.
Make your frosting by combining all your ingredients in a mixing bowl and using either an electric mixer or a whisk to beat until creamy and smooth.
