1 large cooking onion, diced
2 large cloves of garlic, minced
1 package of ground beef replacement (1 lb)
1 can of diced tomatoes (28 oz)
1 can of tomato paste
1/2 tsp ground black pepper
1 tsp of salt
1/2 tsp of dried oregano
1 Tbsp + 1/3 cup of olive oil
1/3 cup of water
450 - 500g of penne pasta
Heat 1 Tbsp of olive oil in a large pot or dutch oven on medium heat. Add in onions and garlic and sauté for 3 minutes or until onions begin to brown.
Add your ground beef replacement and cook for another few minutes.
Now add the rest of your olive oil and water and mix well. The oil here is key - your beef replacement won't have any fat and this oil helps make up for that important texture and flavour.
Add in your diced tomatoes, tomato paste, salt, pepper and oregano and mix until you have a nice thick sauce.
Bring your sauce to a boil, then reduce and simmer over low heat for 30 to 60 minutes. Stir occasionally and adjust the flavours if needed.
Cook your penne pasta according to the package.
Once your sauce is cooked, serve over penne and top with hot chili flakes and vegan parmesan.
