Mac and Cheese with Vegan Parmesan

Ingredients

Pasta

  • 1 ½ cups raw cashews

  • 3 Tbsp fresh lemon juice

  • ¾ cup water

  • 1 ½ tsp salt

  • ¼ cup nutritional yeast

  • ½ tsp chili powder

  • 1 clove garlic

  • ½ tsp Dijon mustard

  • 1 Tbsp soy milk

  • 1 package pasta (500g)

Garnish

  • Chives or parsley

Parmesan

  • 3/4 cup raw cashews

  • 3 Tbsp nutritional yeast

  • 3/4 tsp sea salt

  • 1/4 tsp garlic powder

Preparation

  1. Add all parmesan ingredients to a blender. Mix/pulse until ground finely and set aside.

  2. Prepare your pasta by following the instructions on the package.

  3. Soak your cashews in boiling water for at least 10 minutes to help them soften.

  4. To make your sauce, combine cashews, lemon juice, water, salt, nutritional yeast, chili powder, garlic and Dijon mustard in a blender and mix until smooth.

  5. Pour the sauce over the pasta when you're close to serving and mix in some soy milk to keep it from drying out. Serve warm & enjoy!
