
Ingredients
¼ cup vegan butter (we recommend Earth Balance brand)
½ cup brown sugar
1 Flax Egg (1 Tbsp ground flaxseed + 3 Tbsp water)
⅓ cup of dark molasses
1 tsp vanilla
2 cups flour
1 tsp baking soda
1/2 tsp salt
2 tsp ground ginger
2 tsp ground cinnamon
¼ tsp allspice
¼ tsp ground cloves
Vegan-friendy icing for decoration
Preparation
Preheat the oven to 350°F.
Add the vegan butter and brown sugar to a mixing bowl and cream together.
Prepare your flax egg by mixing flaxseed with water in a small bowl. Set aside for 10 minutes to thicken.
Add the molasses, vanilla and flax egg to the mixing bowl and beat together.
Prepare your dry ingredients by adding flour, baking soda, salt, ginger, cinnamon, allspice and cloves to another large mixing bowl. Stir until well combined.
Add all the dry ingredients into the mixing bowl containing the wet ingredients and mix them into a thick dough.
Flour a surface and your hands and transfer the cookie dough onto your floured surface. Roll it into a ball, adding flour as needed so it doesn’t stick.
Roll out with a rolling pin to around a ¼ inch thick and use a cookie cutter dipped in flour to cut out some gingerbread people. Move the gingerbread men to a baking tray lined with parchment paper.
Gather the scraps of dough, form into a ball and roll out again, cutting out more gingerbread people. Continue adding flour as needed.
Place into the oven and bake for 10-12 minutes and then remove from the oven when the bottom of the cookies turn golden brown. Allow to cool completely before decorating however you wish with a vegan-friendly icing.
