24 ounces fresh tomatoes (4-5 Roma tomatoes or 3-4 regular tomatoes) diced small
1 clove garlic minced
¼ cup fresh basil, finely chopped
2 Tbsp olive oil
1 Tbsp balsamic vinegar
½ tsp each salt & pepper
Olive oil & fresh garlic clove for toasting
Dice tomatoes into about ¼" inch cubes.
Mix all the tomato ingredients into a medium bowl and let stand at room temperature for at least 15 - 20 minutes so the flavours meld.
Slice the baguette, brush with olive oil and toast or grill until lightly browned. Rub each toasted slice baguette with a clove of raw garlic.
Top with tomato mixture.
