Roasted Cauliflower Tacos with Avocado Crema

Picture this: it's a hot summer night, the sun is setting and you're sitting outside in the backyard. What's missing? These cauliflower tacos! Toss them together in a few spices, bake, then mix & match with your choice of toppings and enjoy your evening.

  • 1 large head of cauliflower,

  • cut into small florets

  • 1 Tbsp chili powder

  • 1 tsp paprika

  • 2 tsp garlic salt

  • 1 tsp cumin

  • 2 Tbsp olive oil

  • 2 Tbsp lime juice

  • 1 package of tortillas



  1. Preheat your oven to 400 degrees F.

  2. In a large bowl, toss cauliflower with all your spices, olive oil, and lime juice, then spread out on a large baking sheet. 

  3. Bake in the oven for 20 - 25 minutes or until golden brown.

  4. In the meantime, make your avocado crema by putting all ingredients in a food processor and blending until smooth and creamy.

  5. Next prep your toppings and warm up your tortillas on the stove until their slightly crispy.

  6. Once your cauliflower is baked, assemble your tacos with the toppings of your choice and enjoy!


  • Shredded cabbage/lettuce

  • Tomatoes

  • Red onion

  • Hot sauce

  • Cilantro

  • Fresh lime 

Avocado Crema

  • 2 cups loosely packed cilantro

  • 1 large avocado

  • 1 lime

  • 2 cloves garlic

  • ½ cup olive oil extra virgin

  • 1 tbsp apple cider vinegar or white wine vinegar

  • ¼ tsp salt
